Muhlabia ( Pudding Recipe) recipe - How to make Muhlabia ( Pudding Recipe)

Preparation Time:    Cooking Time:    Total Time:     Makes 10 to 12 small bowls

1 cup soaked rice (chawal)
1 ltr milk
100 gms agar-agar
a pinch of saffron (kesar) strands , dissolved in 1 tbsp of warm milk
50 ml condensed milk
1 cup sugar
1 tsp cardamom (elaichi) powder
sliced almonds (badam) and pistachios for garnishing
  1. Blend the soaked rice in a mixer till smooth and strain the mixture.
  2. Keep the strained rice water aside.
  3. Combine the strained water with milk in a deep pan and mix well.
  4. Heat the milk on a medium flame and simmer for 10 to 15 minutes.
  5. Meanwhile, heat 2 cups of water in a deep pan, add the china grass and cook till the china grass is dissolved completely.
  6. Strain and add the china grass to the milk and mix well and Add the condensed milk, saffron mixture and vanilla essence and mix well.
  7. Add the sugar, mix well and cook for 3 to 4 minutes.
  8. Transfer the mixture in individual serving bowls.
  9. Sprinkle little cardamom powder in each bowl and garnish wioth almonds and pistachios.
  10. Keep in the refrigerator for 3 to 4 hours, or till the mixture is set.
  11. Serve chilled.
