Ingredients
3 eggs , separated
1/2 cup (50 grams) castor sugar
3/4 cup (95 grams) plain flour (maida) , sifted with 1 tbsp. (15 grams) and a pinch of salt
1 tsp (5 grams) butter , melted
1 tsp (5 ml) coffee powder
2 tbsp (30 ml) boiling water
1 tbsp coffee powder
1 tbsp (15 ml) warm milk
1/2 cup (120 ml) thick cream
1 to 2 tbsp (15- 30 grams) icing sugar , sifted
2 tbsp (30 grams) almond (badam) slivers
Method
    Method
  1. Set the oven to 190c. Grease and line a 20-cm round tin
  2. Beat the egg whites till stiff. Add the sugar slowly. Beat until thick and shiny. Add the egg yolks one at a time.
  3. Fold the sifted ingredients into the egg mixture.
  4. Combine the butter,coffee and boiling water. Fold lightly into the egg mixture
  5. Pour into the prepared tin and bake for 25 to 25 minutes. Turn out to cool
  6. To prepare the coffee cream:
  7. Dissolve the coffee in milk. Whip the cream in to form soft peaks. Fold in the cofee mix. Sweeten to taste with icing sugar.
  8. To assemble:
  9. Split the cake into 3 layers. Spread the coffee cream on each layer. Cover the top and sides with the remaining coffee cream. Decorate with almond flakes
