1 large tomato , peeled , seeded chopped
1/2 cup chopped sun dried tomatoes
1 tbsp minced fresh ginger (adrak)
1 clove garlic (lehsun) , peeled
2 tbsp vinegar
1/2 cup water
2 tbsp olive oil
1/4 tsp salt
1/4 tsp ground black peppercorns (kalimirch)
4 cups mixed green (lettuce ,
spinach (palak) , etc.) chopped to medium size
  1. In a blender, combine tomato, sun dried tomatoes, ginger, garlic and vinegar and process until smooth.
  2. Add water, oil, salt and pepper and puree until smooth.
  3. Divide green evenly among 4 plates and spoon dressing over top.
