Very nutritious and tasty pancake preparation with a mixture of different fruits. Serve with warm milk poured over it.

Mixed Fruit Poli recipe - How to make Mixed Fruit Poli

Preparation Time:    Cooking Time:    Total Time:     Makes 4 to 6 servings

200 gms plain flour (maida)
100 gms ghee
salt to taste
a pinch yellow food colour
2 cups chopped mixed fruits (banana , dates, mango , cherries and tutty fruity )
2 tbsp dessicated coconut
100 gms sugar
1 tsp cardamom (elaichi) powder
  1. Combine a little ghee and flour with pinch of salt and kneed to soft dough, using enough water.
  2. Cover with wet muslin cloth and keep aside for an hour.
  3. Heat the ghee in a kadhai, add the fruits and toss for 2 minutes.
  4. Add the sugar and coconut, mix well and cook on a slow flame for 3 minutes.
  5. Keep aside to cool.
  6. Add the cardamom powder and mix well.
  7. Take a greased sheet or banana leaf and keep aside.
  8. Divide the dough into small equal portions and spread a portion on the banana leaf.
  9. Place one or two tbsp of the fruit mix at the center and bring the sides together to seal the filling at the center.
  10. Heat a tava and grease with little ghee and place a poli and cook till it turns golden brown from both the sides till done.
  11. Serve hot with ghee and sprinkle with tutty fruity and a cherry.
  12. Serve hot or warm.
