To Be Mixed Together For The Batter
1 cup rice flour (chawal ka atta)
1/4 cup quick cooking rolled oats
1 tbsp whole wheat flour (gehun ka atta)
1 tbsp ragi (nachni / red millet) flour
1 tbsp bitter gourd (karela) peel , grounded into paste
1 tbsp chopped mint leaves (phudina) leaves
1 tbsp chopped coriander (dhania) leaves
1 tsp ginger-green chilli paste
1 tsp cumin seeds (jeera) powder
1 tsp sugar
3/4 cup buttermilk or as needed
salt to taste

For The Topping
2 tbsp grated carrot
1 1/2 tbsp grated paneer (cottage cheese)
1 tbsp boiled and grated beetroot
1 tsp chopped green chillies
salt to taste
oil for cooking

For Garnishing
flax seeds , roasted
  1. Heat a non-stick tava, grease it with a little oil, pour the batter and spread to make a round dosas
  2. Sprinkle the topping ingredients on each dosa, press it little with a spoon and cook using little oil till it turns golden brown and crisp.
  3. Sprinkle flax seeds on dosas.
  4. Serve hot with coconut–mint chutney.

    Handy tip:
  1. For the coconut-mint chutney, combine the 3 tbsp coconut, 1 tbsp chopped mint leaves, 1 tbsp roasted chana dal, salt, 8 to 10 curry leaves, a piece of ginger, 1 green chilli, 1 tsp sugar, 2 tsp curds and blend in a mixer till smooth. Use as required.
