Mint and coriander are good coolants and this is very easy to prepare and goes well with any type of raita.

Makes 4 servings
- Combine the mint , coriander,little salt and green cillies and blend till smooth.
- Add this to the rice and boil on low flame for 10 min until the flavour starts infusing.
- Add one whole pod of cardomom, clove, 1/2 table spoon ghee and keep in the pressure cooker, allow the cooker to give one whistle.
- Open the pressure cooke and mix the rice then add the remaining ghee and decorate with cashews, very nice and a raita of choice (with cucumber, tomato) will be very nice to eat
