2 cups plain flour (maida)
salt to taste
1/2 tsp carom seeds (ajwain)
1 tbsp dried fenugreek leaves (kasuri methi)
4 tbsp ghee or vanaspati
cloves (laung / lavang)
oil to deep fry

  1. Take the flour in a bowl, add salt, ajwain, kasoori methi and mix well.
  2. Add ghee and mix in well. add cold water and knead into a hard dough.
  3. Make marble sized even balls and flatten them slightly. roll them into small puris
  4. And fold in half and then fold again to make a triangle. stick a clove at one
  5. Corner. now it will look like a paan.
  6. Heat oil in a kadhai. when it is hot enough reduce the heat. add the mathris and
  7. Fry them on medium heat till golden and crisp.
  8. You can also make them in round shape. lightly prick them with a fork so that the
  9. Mathris do not rise like puris.
  10. Drain and let them cool. store in airtight tins.
