Methi Cucumber Salad recipe - How to make Methi Cucumber Salad

Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

1 cup chopped fenugreek (methi) leaves
1/4 cup grated carrot
1/4 cup chopped cucumber
1/4 cup chopped onions
2 tbsp roasted peanuts
1 tsp lemon juice
1 tsp sugar
salt to taste

For The Tempering
1 tbsp oil
1/2 tsp mustard seeds ( rai / sarson)
a pinch asafoetida (hing)
5 to 6 curry leaves (kadi patta)
1 green chilli
  1. Wash methi leaves nicely and chop it finely.
  2. Coarsely grind the roasted peanuts.
  3. In a bowl add chopped methi leaves, grated carrot, chopped onion, chopped cucumber, Coarsely ground roasted peanut, lemon juice, sugar and salt and mix well.
  4. For tadaka heat the oil in small kadai add mustard seeds.
  5. When it splutter add asafoetida, curry leaves and salt coated chilly.
  6. Pour this tadaka on the salad mixture and mix it.
  7. Fresh Methi and cucumber salad is ready.
