Mango Khichiya Pattice recipe - How to make Mango Khichiya Pattice

Ingredients

For The Khichiya
1 1/2 cups water
1 cup rice flour (chawal ka atta)
salt to taste
a pinch of baking soda
1 tsp green chilli paste
1 tsp oil

For The Mango Stuffing
1/2 cup chopped mangoes
5 chopped jalapeno peppers
1 grated cheese cube
2 tbsp grated paneer (cottage cheese)
1/4 tsp dry red chilli flakes (paprika)
1/4 tsp dried oregano
salt to taste

Other Ingredients
oil for greasing and deep frying
Method
For the Khichiya

  1. In a deep pan, take water to boil.
  2. Add salt, baking soda, oil and green chilli paste and mix well. Allow it to boil for 5 minutes.
  3. Add rice flour, cover the pan with a lid and leave it for 5 minutes.
  4. Mix the mixture with a rolling pin and set on a heated tava for 5 minutes on low flame. Turn off the stove. And take out the mixture in another bowl. Allow it to cool.
  5. Grease your palms with little oil and knead the mixture while it is warm and make 12 equal size balls out of it. Keep aside.

For the Mango Stuffing

  1. In a mixing bowl, take all the ingredients and mix well. Keep aside.

How to proceed

  1. Take a ball of Khichiya, flatten it and put the mango stuffing and carefully cover it and make a flat pattice.
  2. Repeat the same process for the rest of rice balls.
  3. Deep fry it and serve with chutney or dip of your choice.
