Ingredients

2 1/2 cups grated coconut (half sweet and half unsweetened)
2 egg whites
6 semisweet chocolate chopped and melted.
1 cup macadamia nuts (you can also use cashew, pistachio or almond nuts.)
oil or cooking spray
1 tsp vanilla essence
1 tin condensed milk
20 prem.satine crackers finally crushed.
Method

  1. In a large bowl combine milk and vanilla. stir in coconut
  2. Nuts and crushed crackers. blend well. beat egg white until stiff. then gently fold into coconut mixture. grease baking sheet lightly with spray or oil. drop rounded tablesppon of cookie mixture into bakfing sheet.
  3. Bake at 350 degrees for 12 to 15 minutes or until golden brown around the edges.
  4. Cool completely.
  5. When cool, dip cookie botoms into melted chocolate.
  6. Place on waxed paper.
  7. Refrigerate until set.
