You can roast the nuts in microwave for about 2 to 3 minutes on high prior to mixing.
- In a large bowl combine milk and vanilla. stir in coconut
- Nuts and crushed crackers. blend well. beat egg white until stiff. then gently fold into coconut mixture. grease baking sheet lightly with spray or oil. drop rounded tablesppon of cookie mixture into bakfing sheet.
- Bake at 350 degrees for 12 to 15 minutes or until golden brown around the edges.
- Cool completely.
- When cool, dip cookie botoms into melted chocolate.
- Place on waxed paper.
- Refrigerate until set.
