Marconi la mexicana style is a macaroni or pasta dish prepared in true Mexican style of cooking The macaroni is cooked with tomato paste and then flavoured with onions, garlic and cilantro. Top the baked macaroni a la Mexicana with paneer balls and serve hot as main course meal or brunch.

Ingredients

1 cup cooked macaroni
1/2 kg tomatoes
1 big onion, chopped
1 capsicum, chopped
1/4 tsp dried oregano or carom seeds (ajwain)
salt, sugar and chilli powder adjust according to taste

For the paneer balls:
150 gms paneer (cottage cheese)
2 tbsp plain flour (maida)
salt to taste
2 green chillies, chopped
1 tbsp chopped coriander (dhania)
1/8 tsp soda bi carb

For the sour cream:
2 tbsp cream
2 tbsp grated processed cheese
1 tbsp lemon juice
grated processed cheese for garnishing
Method

  1. Wash tomatoes.
  2. Blanch the tomatoes.
  3. Remove skin and chop them.
  4. Heat 3-4 tablespoon of oil.
  5. Fry onion and capcicum.
  6. Add tomatoes and other ingredients except macroni.
  7. Cook for 5 minutes. add macroni.
  8. Again cook for a few minutes.

method for paneer balls:

  1. Mix paneer, maida,salt to taste, green chillies chopped, coriander, soda.
  2. Make small balls and deep fry in oil.

for the sour cream;

  1. Mix cream,grated cheese and 1 tablespoon lemon juice.

assembling:

  1. Spread the macroni mixture in a greased baking dish.
  2. Layer with paneer balls.
  3. Spread the sour cream.
  4. Sprinkle grated cheese and bake for 12-15 minutes at 180 degree centigrade.
