Lion's Heads recipe - How to make Lion's Heads

3/4 cup boiled and mashed potatoes
1 tbsp chopped onions
1/4 cup finely chopped mushrooms (khumbh)
1 tsp grated ginger (adrak)
1 small green chilli, finely chopped
2 tbsp crushed peanuts
1/4 tsp soy sauce
¼ teaspoon Chinese 5 spice powder, page…..
1 tsp oil
salt to taste
To be mixed into a batter
4 tbsp cornflour
4 tbsp water
salt to taste
Other ingredients
3 bread slices
oil for deep-frying
To serve
Schezuan sauce

  1. Heat the oil in a wok or frying pan, add the onions, mushrooms and ginger and stir fry for 1 to 2 minutes.
  2. Add the green chilli and peanuts and stir fry till the liquid from the mushrooms dries up.
  3. Add the potatoes, soya sauce, chinese 5 spice powder and salt and mix well.
  4. Cool, divide into 8 equal rounds and keep aside.

  1. Cut the bread slices into cubes of 12 mm. x 12 mm. (½" x ½").
  2. Dip each potato round in the cornflour batter and then coat with the bread cubes. the bread cubes should cover the surface of the potato rounds.
  3. Repeat with the remaining ingredients to make 7 more pieces.
  4. Deep fry them in hot oil till they are golden brown and drain on absorbent paper.
  5. Serve hot with the schezuan sauce.
