Linguine with Capers, Black Olives and Tomatoes recipe - How to make Linguine with Capers, Black Olives and Tomatoes

Preparation Time:    Cooking Time:    Total Time:     Makes 2 servings

250 gms linguine or spaghetti
1 clove garlic (lehsun)
4 ripe tomatoes , skinned seeded and chopped
1 tbsp capers
handful of olives chopped
fresh basil leaves roughly chopped up
parmigiano cheese
salt to taste
olive oil
  1. Cook the garlic in olive oil for a few seconds on high heat, add the tomatoes, olives and capers. Reduce the heat to low and cook the mixture for a further 15 minutes till it accquires a saucy consistency.
  2. In the meanwhile cook linguine or spaghetti according to packet instructions, making sure to liberally salt the water and throw in some olive oil. Once pasta is al dente, drain and add to the tomato, olive and caper sauce. Serve with generous amounts of grated parmigiano or pecorino cheese.
  3. Goes best when drunk with a glass of chianti or syrah.
