A freshly tossed lettuce, crouton and cheese salad can be really delicious and satisfying. What’s even more important is that it is simple to make. Crisp lettuce, soft, grated cheese; toasted bread croutons, crackling fresh pepper, piquant vinegar and virgin olive oil make all the difference. Enjoy garnished with spring onions.
- Place the lettuce in ice-cold water for 10 minutes and drain well. This will make them crisp.
- Just before serving, combine all the ingredients, add the dressing and toss well.
- Serve immediately.
