Ingredients

For Lemon and Coriander Soup
1 tbsp lemon juice
1/4 cup finely chopped coriander (dhania)
2 tsp oil
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/4 cup finely chopped cabbage
1/4 cup finely chopped carrot
3 cups basic vegetable stock
salt to taste
2 tsp cornflour dissolved in 2 tbsp water
Method

    For lemon and coriander soup
  1. To make lemon and coriander soup, heat the oil in a deep non-stick pan, add the garlic and green chillies and sauté on a medium flame for a few seconds.
  2. Add the onions and sauté on a medium flame for 1 to 2 minutes.
  3. Add the cabbage and carrots and sauté on a medium flame for 1 minute.
  4. Add the basic vegetable stock, lemon juice, salt and cornflour-water mixture, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Add the coriander and mix well.
  5. Serve the lemon and coriander soup immediately.

For the Vegetable Stock for Lemon coriander soup

  1. For the basic vegetables stock, wash the vegetables to remove any dirt.
  2. Chop all the vegetables up. There is no need to chop the vegetables finely as you just need to simmer them till they release out all the flavor.
  3. Boil 3 cups of water in a deep non-stick pan. The pan should be able to hold all the vegetables plus a few extra inches of water.
  4. Add the cauliflower. There is no need to be so specific about the vegetables you add. Onions, carrots and celery are the basic flavor-imparting agents for your soup. You can combine them with whatever is easily available like garlic, mushrooms, bell peppers or fresh herbs like parsley, thyme, rosemary and leek. Avoid starchy vegetables as they tend to make the stock cloudy.
  5. Now, also add the carrots. You can add any amount of vegetables but, make sure all the vegetables are added in equal proportions.
  6. Add the cabbage.
  7. Finally, add the celery. This is a vital flavoring agent to any stock recipe.
  8. Add the onions.
  9. Simmer the vegetable stock for around 30 minutes on a slow flame.
  10. Strain the vegetable stock using a strainer and discard the vegetables. Keep aside.

For the Lemon and coriander soup:

  1. To make the corn flour- water mixture for the Lemon and coriander soup, take a bowl and put corn flour into it.
  2. Add 2 tbsp. of water.
  3. Mix very well till no lumps remain. This mixture is called corn flour slurry and is used as a thickening agent in most soup recipes.
  4. To make Lemon and coriander soup, take a deep non-stick pan. Put the oil into it and heat it.
  5. Now, add the garlic. Finely chopped garlic gives a nice bite to the lemon coriander soup.
  6. Add the green chilies. This will add zing to your Lemon and Coriander soup.
  7. Sauté on a medium flame for a few seconds. These ingredients enhance the flavor of your soup.
  8. Likewise, add the onions.
  9. Sauté on a medium flame for 1 to 2 minutes or till they become translucent.
  10. Add the cabbage. Make sure the cabbage is fresh and crisp. Stale cabbage will impart an undesirable flavor into your soup.
  11. Furthermore, add carrots.
  12. Sauté all the vegetables on a medium flame for 1 minute.
  13. Now it's time to add the liquid ingredients to the soup. Add the prepared basic vegetable stock first.
  14. Similarly, add salt and lemon juice.
  15. Now, add the corn flour-water mixture. This cornflour slurry will give your soup the desired consistency.
  16. Mix well and cook the lemon and coriander soup on a medium flame for 2 to 3 minutes, while stirring occasionally.
  17. Turn off the flame and add the coriander. Never add the coriander while the lemon and coriander soup is boiling and always add the coriander just before serving as it tends to become dark.
  18. Give the lemon and coriander soup a stir so that all the ingredients incorporate well.
  19. Pour the lemon and coriander soup out into your soup bowl and serve immediately. The soup has to be served immediately because it might turn bitter if kept for a long time.

Loved this recipe, used fennel instead of cabbage and popped in chopped sugar snap peas along with the coriander, so tasty!

can we avoid adding cornflour in the recipe?

Tarla Dalal    Hi Sweta, Cornflour provides thickness to the soup. If you skip adding it, you will not get the required consistency. You can try substituting it with roasted oats powder.
