Flavoured with freshly extracted lie juice, the Lemon cheese cake is a lip smacking and cool dessert item. The cheesecake mixture is baked and then chilled. Relish with lemon wedges as garnish.

1 packet of lemon jelly
2 tbsp lemon juice
1 cup sugar
1 1/2 cups graham wafer crumbs
1 tsp sugar
1 cup boiling water
1/4 lb philadelphia cream cheese
1 tsp vanilla essence
1/3 cup melted butter
1 can carnation evaporated milk

  1. Place carnation milk in freezer for 1 hour.
  2. Mix lemon jello, boiling water and lemon juice and cool it (don''t let it gel)
  3. Mix graham crumbs and melted butter and 1 tsp. sugar.
  4. Line with crumbs in 9.12" pan. bake crust in moderate oven (300f) for 15 minutes.
  5. Cream together cream cheese ,1 cup sugar and vanilla.
  6. Whip carnation milk until foamy and add 1tbsp.
  7. Lemon juice and whip until stands in peaks (needs a big bowl).
  8. Mix jello and cream cheese etc. with whipped carnation milk.
  9. Blend well and pour over crumb lining.
  10. refrigerate 3to4 hours. serve cold.
