Ingredients
1 cup long grained cooked rice (basmati rice)
1 small onion , sliced
1 red capsicum , sliced
1 green capsicum , sliced
1 yellow capsicum , sliced
1 zucchini , sliced into 2" pieces
1 red pumpkin (bhopla / kaddu) , sliced
5 mushrooms (khumbh) , sliced
1/4 cup chopped tofu
1 cup cauliflower florets
1 cup broccoli florets
2 to 3 tbsp lemon juice
salt to taste
freshly ground black pepper powder to taste
1 tbsp curry powder
1 tbsp garam masala
olive oil for cooking
Method
    Method
  1. Heat the oil in a pan, add the vegetables individually and saute them for few minutes.
  2. Add the lemon juice and salt and mix well.
  3. Combine all the stir fried vegetables, add the garam masala and curry powder and mix well.
  4. Grease a big baking dish or cassarole dish with little olive oil and spread the rice evenly.
  5. Spread the vegetable evenly on top.
  6. Sprinkle little milk and cover with an aluminium foil.
  7. Bake in a pre-heated oven for 45 minutes at moderate temperature.
  8. Serve hot with curds.
