I learnt this recipe from a indian doctor working in singapore. I have adjusted the recipe a bit to add a twist to the fresh garlic taste.

Lasuni Baingan recipe - How to make Lasuni Baingan

  1. Heat the oil in a kadhai, add the brinjal and saute till they turn golden brown and soft.
  2. Sprinkle some salt and pepper powder and keep aside.
  3. Combine the curds, coriander, crushed garlic, tomato puree, salt and chilli powder and blend in a mixer till smooth.
  4. Pour the sauce over the fried brinjals and garnish with fresh sliced tomatoes.
  5. Serve hot.
