Spicy laknavi kofta curry is a potato kofta curry (besan dumplings) simmered in a rich and spicy tomato based gravy, prepared in true lucknowi style of cooking.

For The Koftas
4 potatoes , boiled , peeled and mashed
3/4 cup chopped spinach (palak)
3/4 cup finely chopped coriander (dhania)
3/4 cup finely chopped fenugreek (methi) leaves
2 tbsp cornflour
1 tsp ginger-green chilli paste
1 tsp garam masala
1 tsp lemon juice
salt to taste
oil for deep-frying

For The Gravy
2 onions , grated
3/4 cup fresh curds (dahi)
3/4 cup milk
2 tbsp fresh cream
1/2 tsp turmeric powder (haldi)
1/2 tsp sugar
4 tbsp ghee
salt to taste

To Be Blended Into A Smooth Paste
2 tbsp broken cashewnuts (kaju)
2 tbsp poppy seeds (khus-khus)
1 onion , chopped
10 green chillies

For Garnishing
2 tbsp chopped coriander (dhania)
For the koftas

    For the koftas
  1. Combine all the ingredients in a bowl and mix well.
  2. Divide the mixture into small equal portions and shape them into small round balls.
  3. Heat the oil in a kadhia and deep fry the koftas till they turn golden brown and crisp from all the sides.
  4. Drain on an absorbent paper and keep aside.

For the gravy

  1. Heat the ghee in a kadhai, add the onions and saute till they turn golden brown.
  2. Add the ginger-garlic paste and saute for more 2 minutes.
  3. Add the grounded paste and saute for more 2 minutes.
  4. Add the curds, milk, cream, turmeric powder, sugar and salt, mix well and cook for 15 minutes.

How to proceed

    How to proceed
  1. Just before serving, add the koftas to the hot gravy and simmer for 5 minutes.
  2. Garnish with coriander.
  3. Serve hot.
