Kitcheree is the versatile Indian rice and lentil preparation , popularly known as dal khichdi. The long grain aromatic rice is cooked with moong dal(yellow gram) along with spice powders and then served with raita and papad.
- Mix rice and lentils together wash and drain. leave to soak in water for 1 hour.
- Heat ghee in pan and fry the garlic, cloves, cardamom seeds, and cinnamon for 1 min. add the onion and cook for 2 min.
- Drain rice and lentils and add them to the spice mixture. stir in the turmeric and salt, toss gently over low heat for 5 min.
- Add enough water to cover rice by 1-inch and voer. simmer in low heat for 30-45 min until rice is soaked and liquid is absorbed. garnish with cilantro.
