1 cup moong dal (split green gram), skinned
1 cup basmati or kolam rice
1 carrot, cut into jullienes
250 gms cauliflower florets
2 medium potatoes, peeled & cut into quarters
1 cup green peas shelled or frozen
20 gms ginger (adrak)
10 flakes garlic (lehsun)
6 cardamoms (elaichi), peeled
2 sticks cinnamon (dalchini) (2" each)
4 cloves (laung / lavang)
4 bayleaves (tejpatta)
2 tsp cumin seeds (jeera)
1/2 tsp turmeric powder (haldi)
2 tbsp coriander (dhania) powder
1 tbsp chilli powder
1 large onion, chopped
2 tsp sugar
1 tbsp lemon juice
4 tsp salt
2 tbsp ghee

  1. Wash rice, drain & keep.
  2. Grind together ginger & garlic into a paste. separately grind together cardamoms, cinnamon & cloves adding a little water from time to time.
  3. Roast green gram on medium heat till golden brown (approx. 7 minutes) stirring constantly. remove & wash gram.
  4. Heat little oil in a cooker for 5 minutes. add bay leaves & cummin seeds & stir for a few seconds. add onion & fry till golden brown. add ginger-garlic paste & stir for a few seconds. add washed gram, rice and all other vegetables and ingredients except ground spices & ghee. add 8 cups water. stir once.
  5. Close cooker. bring to full pressure on high heat. reduce heat and cook for 5 minutes.
  6. Remove cooker from heat & allow to cool naturally.
  7. Open cooker. stir in ground spices. pour ghee evenly over khichadi. serve hot.
