Kharbuje ki kheer is an unique indian kheer recipe with rice paste and melon pulp(kharbooja) cooked together in sweetened milk mixture. A creamy and flavourful melon kheer or kharbooje ka kheer is typically served cold with chopped nuts as garnishings.

200 gms rice (chawal) , soaked and blended till smooth
500 gms muskmelon (kharbooja) pulp
200 ml condensed milk
a pinch of orange food colour
300 gms sugar
1 ltr milk
  1. Boil the milk in a deep pan, add the rice paste, mix well and cook till the mixture becomes smooth.
  2. Add the condensed milk, mix well and cook for 1 minute.
  3. Add the muskmelon pulp, mix well and simmer for 10 minutes.
  4. Remove from fire and pour in shikoras.
  5. Cool and cover it with silver warq.
  6. Serve cold.
