Well it's a kind of quick fix if you don't consider the one hour soak time. one can avoid it if you want to, only thing is that rice will take fauther time to cook. the best part is that any vegetable can go depending on the seasonal availability.

Kathiawad Vegetable Pulao recipe - How to make Kathiawad Vegetable Pulao

2 cups long grained rice (basmati)
1 cup cut vegetables (tomatoes, green chilies, cauliflower,lady finger,any other seasonal vegetables)
spices(taj, lavang, tamalpatra)
cumin seeds (jeera) powder
2 tbsp ghee or oil
salt to taste

  1. 1. soak basmati rice in a vessel for an hour. then drain water completely.
  2. 2. take another vessel and pour ghee or oil. saute the rice till light pink, add water, vegetables and salt to taste.
  3. 3. let it cook till rice is done. season the pulao with spices.
  4. 4. serve hot plain or with thick dal. slurp!
