A raita or curd recipe with karela and cucumber. The karela and cucumber raita is healthy and cooling, a must try during summers or with biryanis.
- Heat the oil in a pan, add the karela and saute till they become crisp and the colour turns a little black.
- Remove from the flame and keep aside to cool.
- In a bowl, combine the onions, cucumber, chilli and salt along with curds and whisk well.
- Add the fried karela pieces just before serving.
- Serve immediately.
