The pani in this recipe is made healthy by using black grape juice instead of tamarind water. The combination of black grape juice and the paste of mint and coriander tastes unique. A must try recipe.

Jhat Pat Pani Puri recipe - How to make Jhat Pat Pani Puri

Preparation Time:    Cooking Time:    Total Time:     Makes 3 to 4 servings

Ingredients
20 to 25 puris
5 cups fresh black grapes juice
1 cup chopped mint leaves (phudina)
3 green chillies
1/4 cup chopped coriander (dhania)
1 1/2 tbsp tamarind (imli) pulp
1/2 tsp black salt (sanchal)
1/4 tsp chilli powder

For Filling The Puris
1 cup sprouted moong (whole green gram)
1/2 cup boiled green peas
1/4 cup chopped onions (optional)
Method
    Method
  1. Clean all the greens ( with chilli ) and make a fine paste using sufficient quantity of water.
  2. Mix together black grape juice, ground paste, tamarind pulp, black salt, salt and red chilli powder.
  3. Fill each puri with green peas/ moong, mot and onions.
  4. Then fill it up with the 'pani'.
  5. Relish the unique pani puri.

  1. Refrigerate the 'pani' if you want it chilled before serving.
