Navratan korma(jain) is an easy rich creamy vegetable gravy recipe with an array of mixed vegetables cooked in a delicious cream and tomato based gravy mix. The veggies are stir fried in a spicy kurma, cooked in true jain style and served with roti or paranthas.

Jain Navratan Korma recipe - How to make Jain Navratan Korma

Preparation Time:    Cooking Time:    Total Time:     Makes 6 servings

1/4 cup fresh curds (dahi)
1/4 cup fresh cream
1/4 cup grated processed cheese
2 tbsp fresh soft paneer (cottage cheese)
2 tbsp butter
1/2 tbsp plain flour (maida)
2 tbsp tomato puree
2 cups boiled green peas
1 carrot , chopped and boiled
1/4 cup grated coconut
2 to 3 green chillies
1 small apple
1 small szied sweet lime (mosambi)
1 banana
2 canned pineapple slices , drained
8 to 10 cashewnuts (kaju)
15 to 20 raisins (kismis)
2 to 3 cherries for garnishing
grind to a dry powder:
1/2 tsp cumin seeds (jeera)
1 tsp poppy seeds (khus-khus)
2 cardamoms (elaichi) , shelled
salt to taste
sugar to taste (optional)
  1. Combine the coconut, green chilli and paneer and blend in a mixer to a smooth paste. Keep aside.
  2. Heat the butter in a pan, add the paste and dry masala, tomato puree and saute for 2-3 minutes.
  3. Add the carrots, peas, curds, flour and saute on a high flame for 2 minutes.
  4. Add the fruits, cream, cashews, raisins, salt, sugar, mix well and cook for 5 minutes.
  5. Garnish with cherries and cheese before serving.
  6. Serve hot with naans, or stuffed kulchas.
