Italian Rice with Mozzarella Salad

For the above recipe you can cook rice beforehand, this also saves time.
- Cook 2 cups basmati rice in 4 cups water with little salt, let cool completely.
- Chop all vegetables into strips. mix well, keep aside.
- In another small bowl mix mayonnaise,oil,vinegar and other seasonings.
- Add all veggies to cooled rice,pour mayonnaise mixture on top,add grated cheese and mix well with a wooden spoon.pl. use a large bowl to mix rice well.serve with any hot soup.
