I had some mushrooms and some coconut milk sitting in the fridge. Had to cook something up for dinner. Just kept doing what came to my mind and ended up with this recipe.

Indo- Italian Rice recipe - How to make Indo- Italian Rice

Preparation Time:    Cooking Time:    Total Time:     Makes 2 to 3 servings

1 cup long grained rice (basmati)
2 tsp crushed garlic (lehsun)
1 tbsp salted butter
1/2 cup thinly sliced onions
1 chopped capsicum
100 gms chopped mushrooms (khumbh)
1 cup coconut milk
2 tsp mixed herbs
3 tbsp grated mozzrella cheese
salt to taste
pepper to taste
oil for cooking
  1. Clean and wash the rice.
  2. Combine with the coconut milk and 1 cup of water in a deep pan and cook till the rice is soft.
  3. Remove form the flame, spread on a dry plate and allow to cool slightly. Keep aside.
  4. Heat the butter in a kadhai, add the garlic and saute for 30 seconds.
  5. Add the onions and saute for 2-3 minutes.
  6. Add the capsicum and mushrooms, salt and pepper, mix well and saute for 2 minutes or until cooked but still crisp.
  7. Reduce the flame and add the rice and 1 tsp oil and mix well.
  8. Sprinkle the mixed herbs and toss well.
  9. Sprinkle the cheese and mix gently.
  10. Serve hot with raitha, boondi or onion.
