A tablespoon of soaked poha is ground with the spice paste, to thicken the curry and give it a luscious mouth-feel, which is further accentuated by the addition of cream.

Method
  1. Heat the oil in pressure cooker, add the prepared paste and sauté on a slow flame for 2 to 3 minutes.
  2. Add the tomatoes and sauté on a medium flame for another 2 to 3 minutes.
  3. Add all the vegetables, paneer, sugar, salt and ¾ cup of hot water, mix gently and pressure cook for 2 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Add the fresh cream and mix well.
  6. Serve hot.

I just made this dish for lunch today, I replaced the cream with yogurt to cut down on fat. The gravy came out very flavorful but cooking in a pressure cooker made the veggies taste like boiled. Next time I might just skip the pressure cooking part and cook the veggies in microwave. Thanks for the recipe.
