You may use mozzarella cheese instead of paneer. You may also add par boiled fresh green peas to the potato mixture.

Hot Aloo Paneer Pockets recipe - How to make Hot Aloo Paneer Pockets

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

Ingredients
8 slices of bread
1 cup tomato ketchup
1 cup mint chutney
4 boiled and mashed potatoes
1/2 cup chopped onions
4 green chillies
1/2 tsp dried mango powder (amchur)
1/2 tsp turmeric powder (haldi)
1/2 tsp garam masala powder
1 tbsp oil
salt to taste
1 cup grated paneer (cottage cheese)
Method
    Method
  1. Heat the oil in a pan, add the onions and saute for 7 minutes until golden brown.
  2. Add all the powdered spices, salt, and mashed potato and mix well and cook for 2 minutes.
  3. Remove from the flame and keep aside to cool.
  4. Spread tomato ketchup on one side of the bread slice.
  5. Spread mint chutney on top of another slice.
  6. Spread a generous layer of the potato mixture and sprinkle some grated paneer.
  7. Close the sandwich with the other slice (the one with the tomato ketchup).
  8. Cover with aluminium foil and bake in an oven preheated at 350 degrees for about 10 minutes.
  9. Serve hot.
  10. Repeat with the rest of the bread slices.
