Put a toothpick in sandwich before toasting.
- First heat one teaspoon oil in a pan and fry brinjal pieces from both sides,sprinkle salt& pepper on cut side.
- Spread butter on bread slices.
- Place one layer of each vegetable in this order-lettuce, capcicum,tamato,onion,beetroot,cucumber,carrot,moong or alfa-alfa,brinjal,cheese and one olive on top.
- Cover with other bread slice.
- Toast the sandwich.
- Serve with sauce.
