Ingredients
1/2 zucchini
1/2 red capsicum
1/2 yellow capsicum
1 large brinjal (baingan / eggplant) , cut into 4 silces_spell!
2 cloves (laung / lavang) of
1 cup arugula leaves
1 cup lettuce
2 tsp balsamic vinegar
1 tbsp olive oil
1 small block of manchego cheese
salt and pepper to taste
Method
    Method
  1. Slice the zucchini and grill on both sides.
  2. Grill the aubergine and peppers.
  3. Take of the skin from the grilled peppers and slice.
  4. Marinate the vegetable in 1/2 tbsp of olive oil and garlic.
  5. Keep aside.
  6. In a bowl combine all the salad add the remaining oil and dash of balsamic vinegar.
  7. Season with salt and pepper.
  8. Combine the grilled vegetables after they cool.
  9. Bake the goat cheese in the oven at 175 degree celsius for 6 minutes or until the crust is slightly brown.
  10. Place this carefully over the salad.
  11. Serve immediately.
