Greens and dhal is a healthy lentil recipe with nutrient dense greens like spinach, fenugreek and mustard greens cooked with lentils. The fried onions, tempering of mustard seeds and green chillies add to the spiciness of this green dal recipe.

2 bunches fresh greens ( spinach (palak) or paruppu keerai)
3/4 cup toovar (arhar) dal or moong dal (split green gram) (pressure cooked]
2 green chillies
2 big tomatoes
1/2 tsp turmeric powder (haldi)

For seasoning
1 medium onion, finely sliced
2 to 3 green chillies, de seeded & cut lengthwise
2 whole dry kashmiri red chillies, de seeded & broken up
1 " piece fresh ginger (adrak), grated
1/2 tsp mustard seeds ( rai / sarson)
1 tsp cumin seeds (jeera)
a little asafoetida (hing)
a few curry leaves (kadi patta)
3 tbsp oil
salt to taste

For Garnish:
1 to 1 1/2 tbsp lemon juice
chopped coriander (dhania)

  1. Pluck greens, wash, cut finely and keep aside.
  2. Wash & pressure-cook dhal with saffron powder, green chillies, tomatoes & garlic pods (for 2 whistles remove & keep aside to cool) -
  3. Once the cooker has cooled down open & mash the dhal & keep.
  4. In a vessel add oil,
  5. When hot - add onions & fry till golden brown now add the remaining seasoning ingredients.
