  1. Heat oil in frying pan or wok
  2. When oil is heated add the mustard seeds.
  3. When mustard seeds crackle add the vegetables.
  4. Saute for 1 minute and then add chilli powder and turmeric.
  5. Saute for 5 minutes.
  6. Add 1/2 cup water and cover until potatoes are tender.
  7. Cook off excess water.
  8. Serve with khichdi.
