Ingredients

For The Green Noodles
1/2 cup rice flour (chawal ka atta)
1/2 cup besan (bengal gram flour)
1/2 cup spinach (palak) puree
1/2 tsp ginger-green chilli paste
1/2 cup curds (dahi)
1 tsp oil
1 cup water
salt to taste

Other Ingredients
1/2 cup sliced capsicum
1/4 cup blanched broccoli florets
2 tbsp chopped cashewnuts (kaju)
2 tbsp sesame seeds (til)
1 tsp ginger-green chilli paste
1/2 tsp chopped garlic (lehsun)
1/2 tsp chaat masala
2 tbsp chopped mint leaves (phudina)
2 tbsp chopped coriander (dhania)
2 tbsp oil
salt to taste
Method

  1. Combine the rice flour and besan and keep aside.
  2. Mix together the curds, water, spinach puree, oil, salt, ginger-chilli paste and whisk well.
  3. Bring this mixture to a boil in a thick bottomed kadhai, while stirring continuously.
  4. Add besan-rice flour mixture little and keep mixing , taking care no lumps are formed.
  5. Cook till the mixture turns into a dough. Transfer into a greased thali and knead while hot to a smooth dough using little oil and water.
  6. Fill the dough into a sev "press" and press out thin strands on a greased colander. Steam over hot water for 8-10 minutes. Allow to cool completely.
  7. Repeat the process to prepare other `Green Noodles`.

  1. Heat 2 tablespoon oil add ginger-garlic-chillies and sauté a little.
  2. Add cashewnut pieces and roast till kaju turns light pink.
  3. Add capsicum juliennes, sesame seeds and saute for 3-4 minutes.
  4. Add broccoli, chaat masala, mint, coriander , salt and toss well.
  5. Add prepared `Green Noodles` and toss again.
  6. Serve hot garnished with sesame seeds and coriander.
