  1. Place the grated mangoes, chilli powder and salt in a bowl and mix well.
  2. Heat oil in a non stick pan and add the mustard seeds and allow them to splutter.
  3. Add garlic and asafoetida and mix well.
  4. Add the mangoes, chilli and salt mixture, cumin seeds powder and roasted fenugreek powder and mix well.
  5. Store it in a dry bottle and allow it to mature for a day or two before using.
