Gobhi Tricon recipe - How to make Gobhi Tricon

For The Dough
1/2 cup plain flour (maida)
1/2 tbsp oil or ghee
1/2 tsp baking powder
a pinch of salt

For The Filling
1 tbsp oil
1 1/2 cups cauliflower
salt to taste
a pinch of black salt (sanchal)
1/2 tsp chilli powder
1/2 tsp coriander (dhania) seeds powder
1/2 tsp garam masala
1/2 tsp freshly ground black pepper powder
1 tbsp chopped coriander (dhania)
2 tbsp grated paneer (cottage cheese)

  1. Combine all the ingredients in a bowl, using sufficient water knead a smooth dough.
  2. Cover with a muslin cloth and keep aside.

  1. Heat the oil in a pan add the cauliflower and saute till the cauliflower turns to golden brown in colour.
  2. Add the salt, black salt, chilli powder, coriander seeds, garam masala and pepper, mix well and cook for 5 minutes on slow flame.
  3. Add the grated paneer and coriander, mix well and saute for a minute.
  4. Remove from the flame and keep aside to cool.

How to proceed

  1. Divide the dough in equal lemon sized balls.
  2. Roll them flat.
  3. Add a tsp of filling on the flattened dough and draw up the edges together and make a cone, seal the corner using water.
  4. Repeat the same process for the ingredients.
  5. Heat the ghee in a kadhai and deep-fry the tricon until crispy and turns golden brown in colour from all the sides.
  6. Serve hot with sauce or chutney of your choice.
