Ginger Spiked Carrot Soup recipe - How to make Ginger Spiked Carrot Soup

Ingredients
1 medium onion , chopped
1 tbsp olive oil
8 carrot , sliced
1 potato , chopped
3 tbsp grated ginger (adrak)
5 cups vegetable stock
salt and freshly ground white pepper powder to taste
Method
    Method
  1. Heat the oil in a deep pan, add the onions and sauté till they turn translucent.
  2. Add the carrots and potato and saute for 2 minutes.
  3. Add the ginger and stock, mix well and bring to boil.
  4. Reduce the flame, cover partly, and cook till the vegetables are soft
  5. Remove from the flame, cool slightly and blend using a hand blender till smooth.
  6. Boil again for 5 minutes.
  7. Serve hot or cold.
