You will find that homemade Ginger-Garlic Paste has a fresher and more dynamic flavour than store-bought ones. Plus, it is devoid of harmful preservatives. Sometimes, commercial brands use vinegar for preservation, which changes the flavour of the paste. On the other hand, this pure and simple version gives you a very authentic taste. You can make a large batch and store it in the deep freezer for around two months. Alternatively, you can make small and fresh batches once in a while.

1 cup peeled garlic (lehsun)
1/2 cup peeled and roughly chopped ginger (adrak)
1/4 cup oil
1 tsp salt
  1. Combine all the ingredient in the mixer and blend till smooth, without using any water.
  2. Transfer the mixture in an air-tight container, and store it in the refrigerator upto 1 week.

Tarla Dalal    Hi, Oil is added to avoid discoloration of the paste..add a small quantity, or else make small quantity and use it within a weeks time..

Hi Ma''am, can you please tell the quantity in grams how much ginger and how much garlic should we take also can v add green chili if yes how much gram... Please reply.

Tarla Dalal    Hi, You can take 100gms of garlic and 50gms of ginger. If you want to add chillies you can add 10gms of green chiili to the mixture..

Thanks for sharing this recipe. Friend, I would like to know if I can use water instead of oil. Could I make the paste using only garlic and salt? How much time is conserved in the refrigerator? Thanks a lot!

Tarla Dalal    Hi Marceline, If you add water, the shelf life will be less. Yes you can make the garlic and salt paste and can store it in the fridge for 1 week and freezer for 2 weeks.
