This wonderful fresh pea bruschetta type topping with mint, basil, cheese, garlic and pepper and goes wonderfully with crackers or naan bread.

Garden Fresh Pea Bruschetta recipe - How to make Garden Fresh Pea Bruschetta

3/4 cup fresh green peas
1 garlic clove , chopped
3 tbsp shredded parmesan cheese
1/4 tsp freshly ground black pepper (kalimirch)
1/2 tsp salt
1 tsp fresh basil , finely chopped
1 tsp fresh mint , finely chopped
1 tsp flax seeds
3 tbsp olive oil
15 crackersor naan bread pieces
  1. Boil 2 cups water in a small saucepan and add fresh peas to water. Cook 1 ½ minutes and then drain and cool in an ice water bath for 5 minutes. Drain and set aside.
  2. Place the garlic ,cheese, herbs, salt and pepper into a small food processor and pulse several times to finely chop and mix.
  3. Add in the flax seed and the peas. Pulse several times. Add in 1 tablespoon of oil . Pulse and check for consistency .
  4. Taste and check seasonings. Adjust if necessary. Add more oil if desired.
  5. Cover and chill for 15 minutes.
  6. Serve with 1 tablespoon bruschetta mounded on crackers or naan pieces.
