Gajar Koshimbir recipe - How to make Gajar Koshimbir

Preparation Time:    Cooking Time:    Total Time:     Makes 2 to 3 servings

3 grated carrot
4 tbsp chopped coriander (dhania)
2 to 3 finely chopped green chillies
2 tbsp freshly grated coconut
1 tbsp lemon juice
sugar to taste
salt to taste

For The Tempering
1 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
2 to 3 curry leaves (kadi patta)
  1. Combine the carrots, green chillis, salt, sugar and coconut in a bowl and mix well.
  2. Add the coriander and lemon juice and mix well. Keep aside.
  3. Heat the oil for the tempering and add the mustard seeds and curry leaves.
  4. When the seeds crackle, add this to the carrots and mix well.
  5. Serve.
