Gaati ki subzi is a North Indian style cooked vegetable prepared with steamed gaati or besan dumplings simmered in a tomato puree laden spicy gravy. Enjoy with steamed rice.

Ingredients for gaati
1 cup besan (Bengal gram flour)
1 green chilli, chopped
1 bunch of coriander (dhania) leaves, chopped
1 tsp turmeric powder (haldi)
1 bunch of fenugreek (methi) leaves (optional)
some water
salt to taste
oil to deep fry the gattas

Ingredients for the gravy:
2 onions, finely chopped
2 tomatoes, finely chopped or crushed to make pulp
garlic (lehsun) (optional)
1 tsp chilli powder
2 tsp coriander (dhania) powder
2 tsp cumin seeds (jeera) powder
2 tsp garam masala
salt to taste
oil to fry the onions and masala.

  1. Pour little bit of water into the gram flour which is mixed with methi leaves, coriander leaves, salt, turmeric and chillies.
  2. (roti atta consistent) make into a thick rope consistency and boil in hot water for 15 to 20 minutes.
  3. Take it off the water and cook it and once it is cooled, cut into small pieces and deep fry in oil.

To make the gravy

    To make the gravy
  1. Fry the onions and garlic and add all the powders and tomato puree and let it took till oil comes out.
  2. Then add the prepared gaati and add water if necessary according to the thickness of the gravy.
  3. Serve it with pulkas or rice.
