For a romantic candlelight dinner or a close gathering of friends on a special occasion , this is one of the best desserts that you can think of. The fresh fruits stewed in orange-flavoured sugar syrup get an even more exotic flavour when set alight with a brandy flame.
You can bring the dish of fruits to the table and then pour the flaming brandy over it in front of the guests, as the sight and smell of the liquor flame adds to the aura surrounding this dish!
The Fresh Fruit Flambé tastes best fresh and warm with a topping of whipped cream. Exercise caution while setting alight the brandy in the spoon. Keep it away from yourself.
Method- Heat the sugar in a broad non-stick pan and cook on a slow flame for 2 to 3 minutes, while stirring continuously. Add the orange juice, mix well and cook on a medium flame for 30 seconds.

- Add the fresh fruits, mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally.

- Just before serving, pour the brandy into a large spoon and warm it on a direct flame. Set alight and pour it over the mixed fruits.

- Serve warm with beaten whipped cream.
