Easy Saffaron Cupcakes with Mint and Lemon Glaze recipe - How to make Easy Saffaron Cupcakes with Mint and Lemon Glaze

Preparation Time:    Cooking Time:    Total Time:     Makes 6 serving

1 cup plain flour (maida)
3/4 gm castor sugar
200 gms plain unsalted butter
4 eggs
1/2 tsp baking powder
1 tsp saffron (kesar) strands strands
few drops of kewda essence
6 cupcake mold
1 cupcake case

For The Mint , Honey and Lemon Glaze
1/2 cup coarsely chopped mint leaves (phudina) leaves
6 tbsp honey
1 cup lemon juice
  1. Preheat oven to 175 º C for 15-20 minutes. Line cupcake mold with paper cupcake cases. In a deep bowl, sieve flour with baking powder.
  2. With the help of electric beater or a hand whisk, beat the eggs with sugar until fluffy and smooth.
  3. With a wooden spoon, fold in the flour, saffron strands, kewra essence and baking powder.
  4. Fill the paper cupcake cases with the prepared batter. Do not overfill the cupcake cases. Place the mold onto an oven tray and bake for around 20 to 25 minutes.

  1. Combine honey and mint leaves with lemon juice in a blender.
