Dum Aloo Achaari recipe - How to make Dum Aloo Achaari

4-5 potato , peeled and halved
oil for deep frying
2 onions
3 to 4 garlic (lehsun) cloves
1 tbsp chopped ginger (adrak)
2 tbsp tomato puree
1-2 green chilli
2 tbsp oil
a pinch sugar
salt to taste
1 tsp turmeric powder (haldi)
1 tsp garam masala
1 tsp chilli powder
2 tbsp mango pickle
  1. Heat oil in a pan, add the potatoes and deep fry till they turn golden brown and crisp from all the sides.
  2. Drain on an absorbent paper and keep aside.
  3. Combine the onions, garlic, chilli and ginger and blend in a mixer to a smooth paste. Keep aside.
  4. Heat 2 tablespoons of oil in a pressure cooker, add the prepared paste with salt, turmeric, sugar, garam masala, and chilli powder and saute until browned and produces an oily residue.
  5. Add pickles and mix well.
  6. Add the tomato paste and saute for 2-3 minutes.
  7. Add the fried potatoes, allow to absorb gravy mixture for 3-4 minutes.
  8. Add water, close cooker and allow to come to pressure cooking for 10-12 minutes.
  9. Serve hot with chapatis, naan or rice.
