An authentic recipe to recreate the magical dum aloo (potato) at home by cooking the boiled and diced potatoes in a rich gravy under dum or pressure. Add cream, chopped coriander leaves and a paste made from nuts and poppy seeds to make the recipe all the more rich and delectable.

250 gms potatoes
2 tbsp oil
1/4 tsp cumin seeds (jeera)
a pinch asafoetida (hing)
100 gms tomatoes
1/2 tsp garam masala
1 1/2 tsp coriander (dhania) powder
1/2 tsp chilli powder
salt to taste
chopped coriander (dhania) for garnishing
  1. Peel the potatoes. And cut them into small cubes.
  2. Grate the tomatoes and keep aside.
  3. Heat oil in a pressure cooker and add the cumin seeds and asafoetida.
  4. When the seeds crackle, add the saute till the tomatoes are cooked.
  5. Add the potatoes and saute for 2 minutes.
  6. Add the coriander powder, chilli powder, turmeric powder, salt and garam masala, mix well and add 2 cups water.
  7. Cover and cook for 1 whistle.
  8. Allow the steam to escape before opening the lid.
  9. Serve hot garnished with coriander.
