Dudhi delight is a delightful vegetable soup recipe comprising of dudhi or bottle gourd. The dudhi is cooked with onion, garlic and potatoes and then blended with cream and served hot garnished with celery leaves.
- Combine the bottle gourd, onions, garlic, bayleaves, peppercorns and potatoes, add 1 cup of water and pressure cook for 3 whistles.
- Remove, cool and blend in a mixer till smooth.
- Add the white sauce ,1 cup of water, sait and sugar and mix well.
- Give it a one boil.
- Serve hot garnished with celery, parley and cream.
