A simple salad that you can whip up along with your daily meals and make it healthier and quick to make too! this salad requires cucumber that is marinated with vinegar and salt, and then drained of all water. Potato cubes, radish and onions are also included. The dressing is a creamy garlic mayonnaise and fresh dill leaves that offset the blandness of the cucumber. Sprinkle fresh pepper and enjoy this immediately.
- Combine the cucumber, vinegar and salt in a bowl and toss well.
- Refrigerate for at least an hour. Drain and discard the liquid.
- Add all the remaining ingredients and a little salt (if required) and toss well.
- Serve chilled.
