Dil Pasand Hara Soup recipe - How to make Dil Pasand Hara Soup

1/4 cup dill leaves (shepu / suva bhaji) , blanched
1/2 cup spinach (palak) , blanched
8 basil leaves , blanched
1 tsp chopped celery stalks
1 tbsp margarine
1/2 cup chopped onion
1 tbsp whole wheat four
2 1/2 cups low-fat milk
1/4 tsp freshly ground black pepper powder
1 bayleaf (tejpatta)
salt to taste
1 tbsp almond (badam) slivers for garnishing
  1. Combine the dill, spinach, celery and basil and blend in a mixer using water in which they are blanched, to a smooth puree. Keep aside.
  2. Heat the margarine in a deep pan, add the onions and saute on a medium flame till they turn translucent.
  3. Add the flour and mix well. Remove from the flame and keep aside.
  4. In another pan, boil the milk with the bay leaf for 10 minutes.
  5. Add the pureed spinach mixture and mix well, while stirring continuously.
  6. Add the sauteed onions, mix well well and simmer to a creamy consistency.
  7. Add the salt and mix well.
  8. Sprinkle the pepper and garnish with almond flakes.
  9. Serve hot.
