Crispy Potato Omelette is a combo of rosti and omelette, it is crunchy and delicious, serve it for breakfast or as a snack, or for lunch or dinner with some salad. This mildly spiced omelette will be devoured in no time. Kids love this omelette. You can add grated carrots or any other vegetable that your child likes to the grated potatoes.
- To the beaten eggs add the onions, green chilli, salt and coriander. Mix well.
- Heat oil in a broad non-stick pan, add the grated potatoes and spread it gently using a flat ladle to form a circle.
- Sprinkle a little salt over it, cover it with a lid and cook on a medium flame till the potatoes are cooked and golden brown.
- Pour the egg mixture evenly over the potatoes and let it cook, flip the omelette and cook on the other side.
- Serve immediately.
